Campfire S'mores Brownies

Makes one 8x8 pan

Graham cracker crust:
- 9 whole graham crackers (rectangular) crushed
- 5 tablespoons melted butter
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
Brownies:
- 3/4 cup of salted butter (softened)
- 1 cup granulated sugar + 2 tablespoons
- 3/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup all purpose flour-
- 1 1/2 - 2 cups of mini marshmallows
For the crust:
Preheat your oven to 325 degrees (F) and line an 8x8 square baking dish with parchment paper (or spray with cooking spray).
Combine your crushed graham crackers, sugar, salt and melted butter in a small bowl.
Pour your crust mixture into the baking dish, spread it evenly and pack it as firmly as possible into the bottom of the dish (I use my hands to press it down and finish it off by using a cup to press even more firmly).
Bake for about 10 minutes and leave in pan to cool while you make your brownie batter.
For the brownies:
Cream your butter and sugar in the bowl of a stand mixer for 5-7 minutes, or until light and fluffy.
Add your cocoa powder (while the mixer is off to avoid a cocoa cloud in your kitchen) and whip. Once the sugar butter and cocoa are combined, add your eggs (one at a time), vanilla extract and salt.
Add the flour and mix until just combined.
Scoop your brownie batter into the 8x8 pan, on top of the graham cracker crust, and spread evenly.
Bake for 25-35 minutes or until the edges firm up (the middle should still seem under done. Let cool for 20-30 minutes.
Once your brownies are cool to touch (or just ever so slightly warm cause I'm impatient) slice them into squares. I prefer to slice them before doing the marshmallows for a little less mess. PRO TIP: Slice warm brownies with a plastic knife to avoid tearing the brownies apart.
Set your oven to high broil (or pull out your food torch) and pour your marshmallows onto your brownies (spread them evenly over the top).
Place the pan of brownies (with the marshmallows on top) into the oven and let the marshmallows toast. This will happen very quickly so keep an eye on them the entire time. Mine only took about 1 minute to toast.
Carefully remove the pan from the oven and enjoy your toasty, fudgy, campfire brownies!
