Chocolate Chip Cookie Dough Cupcakes

Makes 2 dozen regular cupcakes

For the cookie dough:

~ 1 stick (1/2c) salted room temp butter

~ 3/4 cup light brown sugar

~ 2 teaspoons vanilla extract

~ 1/2 teaspoon salt

~ 1 cup all purpose flour

~ 2-3 tablespoons whole milk

~ 1 cup mini chocolate chips


For the cupcakes:

~ 1 cup + 2 tablespoons granulated sugar

~ 2 teaspoon vanilla extract

~ 4 tablespoons of butter

~ 1 1/3 cups of AP flour

~ 1 1/2 teaspoon baking powder

~ 1/2 teaspoon baking soda

~ 1/2 teaspoon salt

~ 2 eggs

~ 1/4 cup vegetable oil

~ 1 tablespoon vanilla extract

~ 1/2 cup sour cream

~ 2/3 cup buttermilk

Directions:


Cookie dough:

- In the bowl of a stand mixer cream together the butter and brown sugar. Add the vanilla.

- Next add the flour and salt and slowly combine, add the milk as you're mixing.

- Lastly, add the chocolate chips.

- Scoop heaping tablespoon balls of dough onto a plate and put the plate in the freezer. Freezing the cookie dough balls helps them hold their shape while baking in the cupcakes.


Cupcakes:

- Preheat the oven to 350 degrees (F) and line a muffin tin with cupcake papers.

- In the bowl of a stand mixer, combine your sugar and vanilla. Cream in butter.

- Add flour, baking powder, baking soda and salt to sugar mixture. Combine until a sandy texture is reached. Set aside.

- In the stand mixer bowl (transfer the dry mix into a different bowl) whip together your eggs, oil, sour cream and vanilla.

- Alternate adding the dry mixture and milk to the wet mixture. Always begin and end with the dry mix.

- Put one ball of cookie dough into each cupcake cavity and pour cupcake batter over it. Fill each cavity 1/2 - 2/3 full.

- Bake for 13-15 minutes, a toothpick won’t come out clean because of the cookie dough centers, so I’d recommend giving the pan a gentle shake to be sure the cupcake centers aren’t loose.

- Quickly transfer to a rack to cool. If the centers sink a bit as they cool, don't worry, that's just the cookie dough settling in the center. As soon as they are fully cooled you may frost, decorate, and enjoy! I chose to decorate with mini chocolate chips and a quarter of a homemade chocolate chip cookie.

These cupcakes are so delicious, i HIGHLY recommended them to each and every person . AND they bake out flat!! The texture of the cupcake is light and fluffy and the cookie dough inside just makes it 10x better!! I might just start baking all of my cupcakes with cookie dough inside now ....
