Mixed Berry Buns w/ Lemon Glaze

Makes 12 buns


DOUGH:

~1 cup warm milk

~2 1/2 teaspoons dry active yeast

~1 tablespoon sugar

~1/2 cup salted butter, softened

~1/2 cup sugar

~2 eggs

~1/2 teaspoon vanilla extract

~1 teaspoon salt

~4 1/2 cups AP flour


FILING:

~2 1/2 cups fresh strawberries, chopped

~1 1/2 cups fresh raspberries

~1 1/2 cups fresh blueberries

~1/3 cup brown sugar

~1/2 teaspoon cinnamon

~2 tablespoons cornstarch

~1/4 teaspoon salt

~1/2 teaspoon vanilla extract

~1 teaspoon lemon zest

~1 tablespoon water


GLAZE:

~2 tablespoons vanilla yogurt

~1/2 cup powdered sugar

~1/8 teaspoon lemon extract


1. Combine yeast, 1 tablespoon sugar and warm milk. Set aside for 5-7 minutes.

2. Cream butter and 1/2 cup sugar. Add eggs, vanilla and salt. Add yeast mixture.

3. Add flour one cup at a time until the dough begins to pull away from the bowl and is less sticky.

4. Knead the dough for 3-5 minutes. Try to add as little flour as possible during the kneading/rolling processes, the less you add the fluffier your buns will be.

5. Place the ball of dough into a greased bowl, cover it w/ plastic wrap or a damp towel and set in a warm are to rise for 1 - 1 1/2 hours.

6. Preheat oven to 350 and lightly grease 2 round pie pans.

7. To make filling combine strawberries, raspberries and blueberries in a large bowl (TIP: freeze the berries for 45-60 minutes before making filling for less mess)

8. In another bowl combine brown sugar, cinnamon, cornstarch, salt, vanilla, lemon zest and water. Pour that mixture over the berries and gently fold together. Put in the fridge until dough is rolled out.

9. Roll risen dough out on a floured surface into a large rectangle/oval. Spread the berry mixture evenly over the top of the dough. Then roll the dough gently into a long, thin log. Take a knife and cut the log in half. then cut each side into 6 rolls (I didn't use the ugly end sections).  Place each roll into a lightly greased baking pan. Then cover them with plastic wrap and put then back in a warm area to rise for 30 minutes.

10. Put the risen rolls into the oven to bake for 25-35 minutes.

11. To prepare glaze: Whisk together yogurt, powdered sugar and lemon extract until smooth.

12. Let baked buns cool slightly before glazing and serving.
